Set up the Apollo Client, which lets the app communicate with the GraphQL server
Wrapped the app in ApolloProvider in main.tsx, so all pages can fetch data
The server address is http://localhost:3001/graphql by default. It can be changed with VITE_GRAPHQL_URL in a .env file.
